Everything Has a Beginning

Nature follows its own rhythm. At times it can be unpredictable, but despite our efforts to alter it and the effects of climate change, it always tends to seek balance.

These natural rhythms also include the passing of days and seasons. Everything requires preparation. To raise a glass of fine cava next spring, the work begins many months earlier, in the middle of summer.

It is important to remember that, for a sparkling wine to be called cava, it must undergo a minimum aging period of nine months. Therefore, when we enjoy a bottle in spring, we are tasting the result of decisions and care that began long before.

Today, we will follow that journey, starting in summer and leading to the sparkling wine we will uncork next spring. We will focus on the three classic grape varieties that form the basis of many cavas: Xarel·lo, Macabeu, and Parellada.

Summer: A Crucial Stage for the Vineyard

In the Penedès region, summer is a key period for vineyard development. During these months, the grapes grow and ripen while winegrowers work to protect the fruit from excessive sunlight without sacrificing the ventilation needed to maintain healthy vines.

The Mediterranean climate typically brings a mild June, a very dry July, and an August with occasional storm risks.

The Beginning of a New Story

After all this work in the vineyard, harvest time finally arrives. Once each variety reaches its ideal level of ripeness, a new stage begins in the winery.

From that moment, another cycle starts: the transformation of grapes into wine, the second fermentation, the aging process, and the patient waiting that defines cava.

Months later, when spring arrives and we raise a glass of cava, we will be enjoying the result of all that quiet work that began during the long summer days in the vineyard.
