A correct use of SO2 allows obtaining less oxidized wines, endowed with a better color and aroma, and less volatile acidity, due to its effects such as:


Antioxidant: it has reducing properties, hogging oxygen and preventing the appearance of oxidative notes.
Antioxidásico: It destroys the oxidases avoiding bankruptcies.
Antimicrobial: It exerts an inhibitory activity on yeasts, lactic bacteria and acetic bacteria.
